Candied Ginger
A Ramshackle Pantry Recipe

Great for a treat or for using in other recipes that call for candied ginger.
Ingredients:
– 6 Ounces of ginger (approximate)
– 2 cups of sugar + 2 tablespoons for dusting
– 2 cups of water
Peel ginger
Slice ginger
Add all ingredients to medium pan, less two
tablespoons
sugar.
Bring to boil.
Then, reduce to simmer for one hour.
Remove ginger with tongs.
Keep syrup for cocktails, drinks, or other goodies.
No need to waste!
Remove excess moisture from ginger.
Add remaining sugar.

Put on paper towel-lined plate and put in fridge for at least 4 hours.
Keep in fridge for up to a month.
