In previous posts we have covered the two main elements of a great hamburger. We have talked about the ground beef patties and the hamburger bun. Today we are going to put all of the elements together to make the best hamburger recipe we can.
Grill or Cast Iron for the best hamburger recipe?
Honestly, I think either methods for cooking burgers can produce a really great end product. There is, however, something special about grilling hamburgers. For me, I think it has to do with the feelings that a backyard bbq can bring. A great backyard grill is a celebration of summer, friends, and communing together. Not to mention, a charcoal grill can impart some flavor into grilled meats.
In my humble opinion, grilling is the way to go.
What should the size of the burgers be?
When I patty my ground beef, I prefer to keep them at a quarter pound. That gives me ample meat for a normal sized bun and a good measure for determining cook time. I will grill my patties for 5 minutes per side and they will almost always hit that temperature of 160 degrees. Some may prefer hamburgers that are a bit more pink in the center. You may need to adjust your cook time, but always be sure to follow safety standards in making your best hamburger recipe.
Half pound burgers are also a decent choice. Just be sure to cook your burger to an appropriate temperature.
Finally, make sure to place an indent in your burger patty centers to help prevent turning your burger into a dome.
Buns, buns, buns
In a previous post we made some killer brioche buns that I use for my best hamburger recipe, but that is not everyone’s bag of tea. Choose a bun that is appropriately sized for your burger. This means in diameter as well as height. IMO, getting a bun that is the size of a mountain can ruin an otherwise great burger.

Putting all of our hamburger bits together for a WORLD CLASS from scratch hamburger!
- 1 lb Hamburger
- 4 Hamburger Buns
- 4 Slices of American Cheese
- salt and pepper
- Preheat grill to 500.
- While preheating, add small amount of salt and pepper to hamburger.
- Form four patties.
- Use thumb and place a shallow divot in each burger
- Once preheated, place burger on grates, divot side down.
- Allow to grill for 5 minutes, undisturbed.
- Flip once. Allow to grill another 4 minutes, undisturbed.
- Grill for 1 additional minute with cheese on top.
- Remove and place onto bun.
