When Spring hits, the first garden produce I look out for is rhubarb, and this delicious Rhubarb Pie is one of my favorite baked treats. It is easy to make and has that signature tartness of rhubarb, but also make sure to balance it with enough sweetness to make it just right.

🥧 What makes this recipe special?

Apples are a favorite in our house as Fall hits, but rhubarb is for Spring. This is a great recipe to make with your garden’s bounty or use up the rhubarb you have in your freezer.

🥛 Ingredients

Obviously, the star of this recipe is rhubarb, which is too tart on it’s own and takes more than just rhubarb to make a pie.

Here are the ingredients:

  • fresh rhubarb
  • sugar
  • flour
  • eggs
  • vanilla
  • heavy cream
  • pie crust

I used purchased pie crust, but our Best Buttered Pie Crust recipe would be great for this recipe. Homemade pie crust makes desserts just a bit better.

🍲 Instructions

For as good as this pie is, the instructions are unbelievably easy. Most of the ingredients are for the pie insides. Mix all of them together and fill one pie crust with it.

Spread out the insides and cover your pie up with the second crust. Brush egg wash on the top and put a few slits in the top to help prevent the crust from puffing up. 

Crimp or fold your pie crust and wrap the pie’s outside crust with tinfoil or a crust guard. This helps make sure the crust does not burn.

Bake for thirty-five minutes once your oven is heated to 425° Fahrenheit. Remove the crust guard and continue baking until the crust is a light golden brown. About 10 minutes.

I used a pie crust guard when I made this, but tin foil works better for me. It doesn’t look as pretty but works well. 

🤷 Substitutions and variations

This is not the most versatile recipe, but I have tried a few different variations that make sense. 

  • Storebought vs. Grocery Store – I have made this both with garden rhubarb and storebought. They both worked. 
  • Crust – use your favorite pie crust recipe. I purchased crusts for this recipe, but this Butter Pie Crust recipe would work great. 
  • Strawberries – You could substitute some of the rhubarb for fresh sliced strawberry and make this a nice strawberry rhubarb pie.

📦 Storage

Store covered in the refrigerator for up to one week. You could also freeze the pie as a whole, or in slices, and heat up later.

Rhubarb was used medicinally by the Chinese, Greeks, and Romans as far back as 5000 years ago. It started to become a prominent culinary ingredient in the 19th century.

📝 Tips and tricks

Description

Rhubarb Pie is a delicious Spring and Summer dessert that is perfect with a scoop of vanilla ice cream. Tart rhubarb and sweet flavors come together in this wonderful treat. 


Ingredients

Units Scale
  • 1 pound of drained and thawed rhubarb, chopped
  • 2/3 cup white sugar + 1 teaspoon
  • 1/4 cup all purpose flour
  • 2 eggs + 1 egg mixed for egg wash
  • 1 teaspoon vanilla
  • 1/4 cup heavy cream
  • 2 pie crusts

Instructions

  1. Preheat oven to 425° Fahrenheit
  2. Mix rhubarb, ⅔ cup sugar, flour, 2 eggs, vanilla, heavy cream in large bowl
  3. Put the bottom crust in 9″ pie dish
  4. Fill with mixture
  5. Add top crust, fold top crust under bottom, crimp and either flute or press with fork
  6. Brush egg wash over center of pie, but leave crust alone
  7. Sprinkle remaining sugar on pie
  8. Pierce crust. I just cut for small slits, one on each side.
  9. Cover outside of crust with tinfoil or crust guard
  10. Bake 35 minutes
  11. Remove tinfoil or crust guard.
  12. Bake 10 minutes more or until crust is golden brown
  13. Remove from oven and allow to cool for an hour or two to room temperature.
  14. Place in fridge and store until eaten.
