Soft & Chewy Ginger Cookies

Ingredients:

– 2 ¼ cups bread flour – 1 tsp baking soda – 2 tsp cinnamon – 1 ½ tsp ground cloves – ¼ tsp salt – 1 ½ cup sugar – ½ cup unsulphured molasses – ¼ cup vegetable oil – 1 egg – 1 cup diced candied ginger – 2 tsp grated ginger

Sift bread flour, baking soda, ground cinnamon, cloves, and salt

In Standing Mixer Bowl with paddle attachment, add 1 cup sugar, molasses, and oil.

Mix on medium for 5 minutes

Add egg and mix on low for 1 more minute

Stop and scrape batter from sides and mix on low for another minute.

Mix with the wet ingredients and mix an additional 2 minutes once all is added.

Add ginger and mix for another minute.

Measure and divide into 16 equal parts.

Patty each and coat with sugar. 

Eight cookies per sheet - Two sheets.

In oven preheated to 350°, bake for 13 minutes on center rack.

Remove and place on wire rack after cooling for 5 minutes.

Allow to cool and EAT!
