Lemon Rhubarb Bars

Crust Ingredients: 

– ¾ cup flour – ⅓ cup butter, softened – ¼ cups sugar – ¼ teaspoon salt

Combine Crust Ingredients

Mix and Knead Until Well Mixed

Add into 9 by 9 Baking dish

Press Down and Spread Evenly

Bake Crust at 350° F for 20 Minutes

Filling Ingredients: 

– ¼ cup lemon juice  – 2 cups rhubarb, diced – 3 eggs – 1 ½ TBSP Lemon Zest – 1 cups sugar – ½ cup flour

Mix Lemon Juice, 1 Cup Rhubarb, & Eggs

Blend with Immersion Blender

Add Lemon Zest

Sugar, Flour, and rest of Rhubarb

Mix Well

Add To Baked Crust

Bake More
