Corned Beef Hash


– 1 1/2 Lbs Yukon potatoes – vinegar – Salt (for boiling potatoes) – 4 TBSP bacon fat or butter – 1 medium onion, diced – ½ lb corned beef, chopped – ½ teaspoon paprika – salt, to taste – pepper, to taste – Dash of cayenne powder   – Parsley, for garnish.

Par broil potatoes with vinegar and salt

In skillet, heat corned beef until fat renders and somewhat crispy

Add 3 TBSP of the  bacon fat and heat on medium to medium high

Add potatoes and fry.

Cook for 20 minutes on medium high, stirring and until crispy.

Add more bacon fat and onions. 

Re-add corned beef and fry.

Add paprika, salt, pepper, and cayenne taste.

Heat until everything is hot and crispy

Serve with Eggs or alone!
