Easy & Fresh Asparagus Soup


– 4 tablespoons unsalted butter – 2 pounds fresh asparagus – 1 cup onion, chopped – 3 garlic cloves, minced – ¼ cup flour – 6 cups vegetable stock – 2 teaspoons salt, or to taste – 1 teaspoon pepper, or to taste – 1 cup, heavy cream


Cut & Separate Asparagus Tips

Cut off Bases

Cut into 2-3 inch Sections

In large pot, put butter onion, garlic, salt. and asparagus bases into pot over medium heat

Stir and Cover

Allow to cook and sweat for about ten minutes

Add flour

Stir well

Add stock 2 cups at a time and stir to mix well

Continue until broth is all added

Bring to a boil at medium-high and cook for 15 minutes

Use immersion blender (or blender) to blend soup

Add reserved Asparagus Tips

Add pepper and stir

Add Cream, stir, and serve
