Description

Cheesy Hash Browns and SPAM Casserole is an easy hotdish made with frozen shredded hash browns, SPAM, corn, cheddar cheese, and milk, finished with a crunchy potato-chip topping.


Ingredients

  • 30 ounces frozen shredded hash browns
  • 1 (12-ounce) can SPAM, diced
  • 2 cups shredded cheddar cheese
  • 1 (15.25-ounce) can corn, drained
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne (optional)
  • 2 1/2 cups whole milk
  • 4 tablespoons salted butter, cut into 1/2-inch cubes
  • 2 ounces potato chips, crumbled

Instructions

  1. Preheat oven to 375°F.
  2. Mix frozen shredded hash browns, SPAM, 1 ¼ cups cheese, corn, salt, pepper, and cayenne in a large bowl.
  3. Spread the mixture evenly in a 9×13-inch casserole dish.
  4. Pour the milk evenly over the casserole, then dot the top with the butter.
  5. Bake for 1 hour uncovered on the middle rack.
  6. Sprinkle the remaining ¾ cup cheese over the casserole, then top with the crumbled potato chips.
  7. Bake for another 10 minutes.
  8. Serve.

Notes

  • Omit the cayenne if you prefer no added heat.
  • I use whole milk, but lower-fat milk can also be used. Heavy cream will make the casserole considerably richer.
  • I also tried frozen diced potatoes and that worked okay.
  • Serve with hot sauce, if desired.
