Description
This is a simple and easy tomato enchilada sauce recipe that is great for any Mexican dish, but great for our enchiladas.
Ingredients

- 10 oz (1 can) diced tomatoes
- 1/2 cup beef stock
- 1 small onion
- 2 garlic cloves
- 2 Tbsp olive oil
- 1 Tbsp flour
- 1/2 tsp cayenne
- 1/2 tsp cumin
- 1/2 tsp red pepper flakes
- 1/2 tsp pepper
- 1/2 tsp salt
Instructions
- Dice onion and garlic
- Add olive oil to large sauce pan and heat to medium
- Add onion and garlic and cook until translucent
- Add all spices
- Add flour to sauce pan and mix
- Slowly add beef broth while stirring
- Let simmer until broth is gravy like
- Add tomatoes
- Heat and simmer on medium for 30 minutes
