Easy No-Cook Refrigerator Pickles

Refrigerator Pickles are a great way to use up your garden’s bounty and a delicious treat that is so easy to make. With just a few ingredients and ten minutes, you can make this classic dish. Straight from a handed-down recipe card to you, enjoy this easy no-cook Refrigerator Pickle recipe.

Refrigerator Pickle Recipe Summary

This recipe is very easy to make and many thanks to my in-laws for the great recipe. Mix together cucumbers, onion, sugar, vinegar, salt, and celery seed in a large dish. Allow it to sit in the refrigerator for 24 hours. Then, eat them! 

Really, it is that simple! We tend to keep these cucumbers around during the Summer, and while I would say that it is good for a month, it might last longer. As new cucumbers finish in the garden, we slice them up and add them to the mix. 

Why This Recipe Is Great

The best part of this recipe is that it tastes great. This makes a decent-sized batch of sweet, although not too sweet, pickles that are ready in no time.

Besides the delightful flavor, it is easy to make, and I don’t even have to turn on my stovetop. Just a few minutes of prep work to make these, which is excellent on time savings. This snack or side dish has a whole bunch of flavor for very little work.

You Don’t Think Your Recipe Looks Right? Check this first!

When making this recipe, you might think it doesn’t look right after you mix all the ingredients. It’s ok! There shouldn’t be that much liquid in the dish.

The ingredients will pull moisture from the cucumbers, and when you check them the next day, they will look right. Of course, if you give them a few days, they will look even a bit more different, but all it needs is an overnight bath in the fridge.

When you mix the ingredients together, it will looks like there is no liquid. Once this sits in the fridge for a while, the liquid will be pulled from the cucumbers and it will start to look more like brined pickles.

How Long Does This Keep?

While I think it can last longer, try to consume the cucumbers within a month. If you eat them as fast as we do, you likely won't have this problem.

Of course, use some common sense in this. Do the cucumbers look and smell right? Does anything look odd about them? I suggest using ‘one month’ as a standard.

Switch Up Your Refrigerator Pickles

This recipe calls for some particular ingredients, but there are other things you could try to make this recipe your own. Here are a few ideas:

  • Add sliced peppers
  • Add garlic
  • Use different varieties of onions, such as red.

If you are looking for a simple, easy, no mess recipe for your cucumbers, you have got to give this refrigerator pickles recipe a try. They are great to have around and it is a great way to use up our garden's cucumber bounty.


Ingredients

Scale
  • 6 medium unpeeled cucumbers
  • 2 cups sugar
  • 1 cup white vinegar
  • 1 tablespoon salt
  • 1 teaspoon celery seed
  • 1 onion, thinly sliced

Instructions

  1. Mix all ingredients together in a large bowl
  2. Let stand in the refrigerator for 24 hours or overnight
  3. Serve
