Ceviche is outside of my wheelhouse, but it felt like a great food recipe to develop with the greyhound in mind. As a part of our greyhound series, we are going to look to the deep blue ocean for food inspiration. Today, I am going to share my Grapefruit Ceviche recipe.

Cocktail To Food

I always think it is fun to flip the script. If I can take a cocktail recipe and try to translate it to a food dish, I feel a bit of giddiness in my soul. The same holds true if I can take a food dish and develop a cocktail based on it. The ingredient that ties this all together is citrus in nature and it just feels appropriate to me.

Into Spring

For this whole series, I have felt like we have been pushing into Spring. Sure, grapefruit is primarily a Winter fruit, but we are talking about Winter in warm places. Certainly, we will not be growing grapefruit in Fargo’s Winters. So, it means warmth to me!

Cooking With Citrus

Well, it isn’t really cooking. No, the fish isn’t really raw either. I learned from Chowhound that what happens is that the raw fish, when soaked in citrus, goes through a process called denaturation. This turns the fish white and hardens it. This is how the fish in Ceviche is “cooked”.

Grapefruit in the ceviche recipe

Ceviche is traditionally made with lime or lemon. I learned that a potential problem with grapefruit is that it does not have as much acidity as other citrus fruits. So, instead of just fully replacing out the lemon or lime from a traditional recipe, we are going to place the fish in a grapefruit AND lime mixture. We will also add grapefruit to the ceviche.

Pick Good Fish

There is a local place that sells fresh red snapper, so THAT is what I am going to go with. As you can imagine, fresh fish might be a bit of an obstacle in my part of the world. That being said, the world is getting closer and closer. Even if I did not have a local fishmonger that I could trust, I could order overnight direct from some places.

Description

Do you like ceviche? Well, twist it up with a bit of grapefruit! This is a classic ceviche recipe with a bit of grapefruit and grapefruit juice in it.


Ingredients

Scale
  • 10 Ounces Red Snapper
  • 1/4 cup lime juice (2 limes)
  • 1/4 cup grapefruit juice (1/2 Grapefruit)
  • 2 Roma tomatoes chopped
  • 1/2 Grapefruit, cut into sections
  • 34 diced garlic cloves
  • 1/2 chopped red onion
  • 1 jalapeno, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 slightly firm avocado, completely cleaned and chopped
  • Salt and Fresh Ground Pepper to taste

Instructions

  1. Add fish and juices to bowl
  2. Put in the fridge for about 20 minutes or until fish is white all the way through
  3. Drain juice from fish
  4. In a separate bowl, add fish and all of the other ingredients
  5. Serve with chips or tortillas

  7. I have to admit, I’ve never tried ceviche. This looks sooo good, though! The colors are pretty and bright and I love the flavors. This may be something I’ll add to the “going to try” list.






  8. In another two weeks Hubby will be doing some serious fishing — hopefully I can use some of his catch to make this recipe. I love grapefruit and the flavors scream summer to me. What a fresh dish to serve when it’s too hot to cook.
