If you grow rhubarb in your garden, you know that when it comes up, there is a lot and you want to use it. One way that we have learned to use rhubarb from our garden is by incorporating it into our cocktails! Today we are making a delicious and beautiful Limoncello and Rhubarb Cocktail that I am naming Barb’s Special Roux. Rhubarb Syrup
We previously shared our Rhubarb Simple Syrup recipe and having that is a precursor to making this little number. So, make sure to check out that Rhubarb Syrup recipe or maybe you already make a version of your own. Either way, a rhubarb syrup is instrumental to making Barb’s Special Roux and this rhubarb cocktail.
Limoncello
I am fortunate enough to have a wife that spends time making our own limoncello, so I am really using some special ingredients in this cocktail. You can hop on down to your local liquor store, however, and pick up some limoncello for this drink.
Vodka Vs Gin In This Rhubarb Cocktail
I really debated on what spirit to use in this drink. My initial gut instinct was to use gin, but ultimately decided on vodka. Gin would have added more of an herbal and botanical flavor that tends to really give cocktails character. This drink should be celebrating the rhubarb and lemon though! For that reason, I decided to put the liquor profile on the background, instead of allowing both the rhubarb and lemon to shine in this cocktail.
I think, however, gin would be a great substitute in this cocktail. If gin is really your jam, give it a go and see how it do.
Dry Shaking and Egg Whites
During our Penicillin Cocktail series, I shared the Sam Ross Sour recipe that also used this technique. Egg whites, not only help add that beautiful foam head, but also adds some luxurious texture to a cocktail when combined with an acid. This is raw egg, so use your own judgment on whether you want to do this, but I love using egg whites.
The dry shake helps bring out the frothiness of an egg cocktail. This includes adding all shakeable ingredients into a shaker and then shaking. Adding ice after the shake and shake again. It gives that mad froth look.
Who is Barb?
I don’t know a Barb. I just thought Barb’s Special Roux was a fun play on Rhubarb.

Description
Barb’s Special Roux is a special cocktail. This Limoncello and Rhubarb Cocktail is Spring at it’s best and a delicious craft drink. Get the recipe today!
Ingredients
- 1 1/2 Ounce Vodka
- 1 Ounce Rhubarb Syrup (see notes)
- 1/2 Ounce Limoncello
- Juice from 1/2 Lemon
- 1 egg white
Instructions
- Add all ingredients to a shaker
- Dry shake for 15 seconds
- Add ice to shaker and shake for another 10 seconds
- Strain into a coupe glass
- Garnish with a lemon twist or candied rhubarb would be neat.
